The vineyard management strives to respect the Domaine’s philosophy: to obtain riper and healthier grapes instead of aiming for larger yields. Grapes are 100% de-stemmed upon arriving at the winery. All their wines aside from the Bourgogne Aligoté are aged in oak barrels (20% new) from 12 to 18 months.
